Edamame Hummus

I am always looking for delicious new recipes. Hence why my Pinterest is filled with tons of different food boards. I have been wanting to make hummus for a while but I didn't have anything to blend the ingredients with since our blender crapped out on me about a year and a half ago. With the wedding and all, we decided to wait and see if we got it as a gift and sure enough, my awesome former stepmother got it for us. Side note: I actually just contemplated saying my friend got it for me to simplify but even though Lauren IS my friend, I still see her as a parent figure. Random information about me LOL.

Anyways...on to the hummus!

Edamame Hummus

What You'll Need:
1 cup frozen, shelled edamame (green soybeans)
1/4 cup water
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon minced garlic
1/8 teaspoon hot pepper sauce
2 tablespoons chopped fresh flat-leaf parsley
6 (6-inch) pitas, cut into 8 wedges

Combine soybeans and 1/4 cup water in a small saucepan; bring to a boil. Reduce heat, and simmer 10 minutes. Drain.
Combine soybeans, oil, juice, salt, garlic, and hot pepper sauce in a food processor; process until smooth. Add parsley, and process until blended. Serve with pita wedges.

I didn't want to buy a GIGANTIC amount of fresh parsley which seems to be the only way Publix sells it so I substituted 1/2 teaspoon of dried parsley and that worked well. The garlic flavor definitely comes through pretty strong so we'll see if my clients are cringing as I talk with them this week! Ha! I didn't get pita bread because I have Stacy's Pita Chips which are SO good. I highly recommend them. I eat them by themselves. I get the "Simply Naked" ones which only have sea salt. Oh, and I have carrots. For some other suggestions, I love to do red bell peppers or celery for some crunch. 
Also, I don't have a food processor so I used my Kitchenaid blender. The consistency is pretty chunky. I told Brian that we are going to have to invest in a small food processor. We were trying to do without one in our teeny tiny kitchen. I cannot wait until we buy a house but that's a whole other post!
I was so focused on the recipe and multitasking with feeding the dogs and making my lunch for tomorrow that I didn't get a bunch of detailed pictures along the way.

I will definitely call this recipe a success. Sometimes I am so skeptical of what I see on Pinterest and if it will come out looking like the picture.
